LAS VEGAS, NV — Some restaurants begin with market research… Valencian Gold began with an obsession for the art of live-fire paella.
After years of cooking, studying, and living throughout the Iberian Peninsula—from tiny family-run tabernas to some of the country's most celebrated kitchens—James Beard Award–nominated author, chef, and award-winning restaurateur Jeffrey Weiss came to Las Vegas with one goal: build a restaurant that captured the feeling of Spain, not just its recipes.
When Valencian Gold first opened in 2019, it introduced off-strip Las Vegas to Valencian paella and quickly developed a devoted following. Then came the pandemic.
Rather than closing its doors, Valencian Gold pivoted to serve the community, partnering with Delivering with Dignity to prepare and distribute nearly a million meals to Southern Nevadans facing food insecurity during one of the city's most challenging chapters.
As Las Vegas emerged from the pandemic, Valencian Gold evolved from a humble fast-casual paella shop into a full-service live-fire tapas & paella restaurant, earning critical acclaim and awards, national and international recognition, and becoming a destination for locals and guests from around the world.
Now, after a three-year hiatus, the next chapter begins…
Valencian Gold is returning to Las Vegas.
And this time, it's coming to the Arts District.
Bigger. Louder. More delicious than ever.
Expect wood-fired paellas, a bustling tapas bar, vermouth, classic Spanish cocktails, charcoal-grilled seafood and meats, vibrant vegetables, late-night conversations over one more bottle of wine, whimsical art & design, and the beautiful chaos that happens when food, drink, music, and people collide.
"We've never been interested in copying Spain," says Weiss. "The goal has always been to capture how Spain feels. It's loud. It's generous. It's deeply rooted in tradition, but it never stops evolving. That's the restaurant we're building."
The move to the Arts District is a natural fit for one of Las Vegas's most eclectic Spanish dining experiences. The Arts District has become one of the few places in Las Vegas where independent restaurants, artists, artisans, and entrepreneurs all speak the same language of creativity and community.
Valencian Gold hopes to contribute something lasting to this ecosystem—a restaurant where locals become regulars, visitors discover something unexpected, and every night feels like a celebration.
